Pancakes for Pancake Day!

Today is pancake day, something that I had never heard of till I came here to Ireland, but I have no large family to feed in the morning and to be honest, I hate getting out of bed in the morning so I just wasn't up to making myself pancakes for breakfast. I think they go down much better in the evening! I decided first of all to make potato pancakes because I remember my mum making them when I was a kid. They are made all over the place and I have sampled Lithuanian and Austrian potato pancakes - everybody seems to think that they have a unique, traditional dish and are disappointed when I tell them that I grew up with these too! I asked my Mum how to make them and below is her recipe. Well, sort of. It's one of those things that you just approximate, so this is an approximate recipe that should turn out good.


Potato Pancakes

4 large potatoes, grated (800 grams)
1 large onion, chopped finely
2 eggs
1 cup plain flour
1 teaspoon baking powder
Up to 1/2 cup milk
Salt and pepper

Now, all pancakes are pretty much made in the same way. So - whisk together all of the above ingredients.


Heat some oil in a frying pan and cook the pancakes until they are golden brown on each side.


Enjoy! This recipe will feed 4 people, or 2 very hungry people. Just 3 or 4 of these are very filling. Serve with sourcream, or some sort of sauce, a bit of butter, or just plain.

  1. Talking about recipes from your country, someone recently mention rewena paraoa - its a Maori fermented potato bread recipe. I haven't tried this yet

  2. Hi, thanks for your comment! I haven't tried Maori bread yet either, in fact I've never made bread that uses a starter instead of yeast, but I'd really like to try it! I'll add it to my to-do list (which is already pretty large!)

  3. looks good sister! I made potato pancakes not too long ago on my sister blog, Taste Buds. I served them with English bangers and peas (i know, my partner is British) and it was surprisingly enjoyable. Love it!
