Lemon & Strawberry Cupcakes

I have been very lazy, and have not posted a yummy new recipe here for nearly a week! So this is my first April post and it really suits the lovely sunny day that we are having here today. Lemon and strawberry always put me in mind of summer and I don't know why I haven't used these flavours for cupcakes in the past. I saw a blog post for Strawberry lemonade cupcakes and suddenly I knew what I would be making for my friend's birthday. I already love to put lemon and strawberries together in my amazing lemon cheesecake and now I have managed to make a cupcake that tastes just as good! When I was small my Nan would always have plenty of baking to feed us for afternoon tea and my favourite were her little cupcakes with lemon icing and sprinkled with hundreds & thousands. When I tasted my own cupcakes they immediately put me in mind of that, which is nice because she has never shared her recipes with me. It's not that she doesn't want to, but she is very old and not used to having a helper in the kitchen, and I was very small when I used to try to help her bake. Now she does no baking because she no longer has a coal-stove and is too wary of electricity to learn how to use an electric oven (she's 93, and I guess she fits into the stereotype of old dogs not learning new tricks). Hopefully she will not be completely eccentric by the time I get back to NZ and maybe it won't be too late to learn a thing or two from her. For now, however, I will stop reminiscing and get on with the recipe.

Lemon Cupcakes

125 grams butter
1/2 cup caster sugar
3 eggs
2 tablespoons custard powder
1/2 teaspoon lemon zest
1 tablespoon lemon juice
1 cup flour
2 teaspoons baking powder
1/4 cup milk

First, as always, preheat the oven to 180 degrees celsius and line a muffin tin with paper liners. I used small liners and made 16 cupcakes, but this recipe would generally just make 12.

Soften the butter slightly in the microwave, then add the sugar and beat until light and fluffy. Normal sugar is OK if you have no caster sugar but your cupcakes will not be so wonderfully light as they could be. They're still good though.

Add the eggs one at a time, beating well after each addition. If you add them all at once the mixture will go a bit funny so just take your time. Add the custard powder, lemon zest and lemon juice, then beat some more.

Sift in the flour and baking powder. Continue to beat until it has all been incorporated into the mixture, then add the milk. Beat the mixture until it is smooth - don't worry about over-beating, it should be right, and you want to be sure to get plenty of air into the mixture so that you have soft, fluffy cupcakes.

Finally, spoon the mixture evenly into the cupcake liners and bake for about 20 minutes. My small cupcakes took just 20 minutes but larger ones could take 25 minutes so check that they are done by inserting a skewer into the centre. When it comes out clean take the cupcakes out of the oven and let them cool for about 5 minutes. Then remove the cupcakes and let them finish cooling on a wire rack.

Lemon Strawberry Frosting

225 grams butter
1 tablespoon lemon juice
1/2 teaspoon lemon zest
3 tablespoons strawberry jam
2 1/2 cups icing sugar
Chopped strawberries (optional)

Soften the butter very slightly, then begin to beat it with an electric beater until it is creamy. Add the lemon juice, lemon zest and strawberry jam and beat them in well. Sift in the icing sugar a half cup at a time, beating well after each addition, until you have a rather stiff mixture. Then pipe or spread the frosting onto your cupcakes. Make sure to eat some as you go because this frosting is really amazingly delicious. If you want to decorate the cupcakes further, add a strawberry to the top of each, or sprinkle them with chopped strawberries, or some other sort of pretty sprinkles for that matter.
